Mussels “a la fare la scarpetta”

As the Italians say, “fare la scarpetta”. Which means to wipe your plate with bread.

In the mood for a big bowl of mussels? Light, fresh, so easy and delicious! 

  • Rinse 1 lb of mussels well.

  • Sauté 1/2 c chopped onion and 2 cloves of garlic in extra virgin olive oil.

  • When onions are soft and transparent mix in the mussels and a 1/2 cup of white wine.

  • Cover and simmer for about 10 minutes or when the mussels start to open.

  • If you enjoy cherry tomatoes, slice a hand full in half and mix them in for a few minutes to soften up.

  • If your someone who like a little heat like myself, sprinkle in some crushed red pepper flakes (peperoncino).

  • All you need is some crunching, tasty Italian bread to dunk in and enjoy the savory sauce.
